Our smashburger is a made up of 2 patties of minced beef flattened onto a searing hot grill with a sprinkle of sea salt. Then cheese is put on top and melted and then the patties go into a lightly toasted bun, we add pickles and very thinly sliced red onion and our very own 'smash sauce'. That's it.
Bill Culverston (The Dairy Cheer Hamburger shop Kentucky) created the smashburger when an employee of his discovered that smashing a no 10 bean can while grilling them was a great way to get the best flavour into the burger.
By snashing the burger on the griddle the meat has greater contact with the heat and this leads to a better flavour. The effect is that the amino acids and the 'good' suger cook together adding flavour and a crunch (this is known as the 'Maillard effect' and it is also why toast tastes good.)
